PBJ Oatmeal - 1

Oatmeal isn’t sexy. It’s dull and mushy, and no one every food dreams about oatmeal. And yet on a cold morning, a bowl of oatmeal is kind of nice. The great thing about oatmeal is it’s a good “blank canvas.” You can put anything in oatmeal and it’ll taste like whatever you put in it. Put hot dogs in your oatmeal and it’ll taste like hot dogs. I put peanut butter and jelly and mini chocolate chips in mine and serve it with sliced bananas with cinnamon and honey. Don’t forget the glass of milk.

PBJ Oatmeal - 2

RECIPE
makes 2 small or 1 heavy portion

1 c rolled oats
2 c water
pinch of salt
2 T creamy peanut butter
1-2 T raspberry jam
1-2 T honey
1 T mini chocolate chips
1 T whole peanuts

1. Boil the water with salt, then add the oats.
2. Simmer a few minutes until it thickens to the consistency you prefer.
3. Remove from heat and stir in the peanut butter and honey.
4. Top with jelly, mini chocolate chips, and whole peanuts.
